Lamb Chops
Broil, pan-sear or grill at high heat for a tender, juicy morsel that you'll want to eat right off the bone. Chops are cut ~1" thick and are NOT Frenched. For Frenched Chops, try our Lollipop Chops.

Lollipop Lamb Chops
A tender medalion (about 2" in diameter) sits at the end of a perfectly-Frenched 4" bone on these miniature treats. Serve them as canapes or small-bite appetizers for any fancy meal. These chops are much leaner than our "Baby Lamb Chops".

Rack of Lamb
Our most tender and elegant lamb roast will dazzle your guests when it comes to the table, and delight even more when it first hits the tongue. The rack is cut from the rib and includes 8 connected chops. Allow 2 chops per person. This roast is NOT Frenched.

Frenched Rack of Lamb
We've Frenched the top 3-4" of the rack for presentation, but left a thin layer of fat over the chops to keep them moist during cooking. When you need to go the extra mile, this beautifully-butchered rack of tender lamb is for you.

Lamb Roast
Our boneless lamb shoulder roast is netted for your convenience. Juicy, tender and full of flavor, this cut will do well rubbed with fresh herbs and garlic, seared and slow roasted.

Lamb Short Ribs
A small rack of 4 ribs, and the closest cut we have in kosher to pork spare ribs. For maximum tenderness, braise or steam then finish on the grill. For medium tenderness sear on hot grill, then move to indirect heat for 30 minutes. Great lamb flavor, just the right amount of marbling. 2 racks per pack.

Lamb Shoulder- Bone in
A classic cut in French cooking, this bone-in roast is perfect for slow cooking. You can braise, or dry roast at very low heat, or for a real treat, smoke for 18-24 hours. After cooking, meat can be pulled, or sliced off the bone. .

Lamb Shoulder Chops
These chops are meaty and flavorful. Larger than our lamb chops, these shoulder chops make a hearty meal. Marinate and broil or grill at high heat.

These shanks are perfect for slow cooking or braising. Cook them for hours until the meat is falling off the bone.

Lamb Rainbow Chops
Also called "Round-Bone Chops", these bone-in chops are cut from the lower part of the shoulder and feature the incredibly tasty and tender rainbow meat, the same morsels we use in our delicious kabobs. Please note that the fat content of this cut varies from during the year based on the size of the lamb.

Ground Lamb
Shape into kibbeh, mix with ground beef in meatloaf, or make lamb burgers with cilantro, mint and garlic.

Lamb Cubes for Stew/Kabob
These boneless lamb cubes are cut from the shoulder and are tender enough to use in any recipe calling for boneless lamb. Lean and full of flavor, these cubes will make a perfect stew, or they can be marinated and used for kabobs.

Lamb Neck for Stew
These BONE-IN slices from the neck are cut ~1.5" thick and are ready for your stew pot. This will make a dinner that will really stick to your ribs!

Lamb Riblets
Lamb riblets are cut from the breast, which is one of the tastiest and fattiest parts of the animal. The fat is integral to the cut, and you don't need to trim it before cooking. To cook: braise in liquid, cool, then skim fat; or smoke or slowly roast to allow fat to render for an incredibly tender, succulent treat. Riblets will be meltingly tender after 5+ hours of cooking. After cooking, you can cool and skim the fat, or just trim it off as you are eating. Pieces are about 4" long and contain 3-4 rib bones. 3-4 pieces per pack. Recipe

Lambskin - Longhair
These fluffy hides from our Shenandoah Valley Lamb are supple, luxurious, warm and beg to be touched! Drape over a chair or couch or use as a small rug. Tanned locally in Pennsylvania. Machine Washable. Aprox 3-4' long (exact sizes vary). Mostly ivory with some color variation.
Note: Lambskin will be mailed separately from meat. Price includes shipping & handling and tax. Packing & refrigerant fees will show on your receipt but will be removed before your card is charged if not applicable.
